3 1/2 cups vegetable stock

1/2 cup minced onion

12 oz. cooked chicken breast, diced

1 tsp. dried oregano

1 tsp. chili powder

1 cup vegetable stock

8 corn tortillas

4 oz. low-fat cheddar cheese, shredded
